Jackie’s Coconut Bread

Have I ever mentioned how much I Love my Mother in law? Seriously, I won the jackpot. I have ALWAYS heard SO MANY horror stories about bad mother in laws and issues, and I was honestly planning on having to work through some things, but, when I met my husband’s Mom I was so excited! I have been around/in the family for six-ish years and never had any problems. She is absolutely wonderful and my kids adore her {and I do, too!} She is an incredible example, and I really look up to her. Not too mention she raised my husband, which is part of the reason he is so amazing! Thank You Jackie! I have learned so much from you already!

Okay, I could go on and on, but I will save that for her birthday card 🙂 I am going to share one of my favorite recipes I got from her. Everyone’s heard of Banana bread, but have you heard of Coconut Bread??? I didn’t think so, so here goes, it is SO GOOD. Like, I can’t stop eating it good. Jackie made it at Christmas one year and I was hooked. Thanks again for sharing the recipe! 🙂

Jackie's Coconut Bread

A Super Moist Coconut Bread with a sweet syrup topping.

  1. 4 Eggs
  2. 2 Cups Sugar
  3. 1 Cup Oil
  4. 2 tsp. coconut extract
  5. 3 Cups Flour
  6. 1/2 tsp. baking powder
  7. 1/2 tsp. baking soda
  8. 1/2 tsp. salt
  9. 1 Cup Flaked Sweetened Coconut
  10. 1 Cup Nuts {optional}
  11. 1 Cup Buttermilk
  1. 1 Cup Sugar
  2. 2 TBSP Butter
  3. 1/2 Cup Water
  4. 1 tsp coconut extract
  1. Beat Eggs, add sugar, oil, and coconut extract. In a separate bowl combine your dry ingredients {Flour, baking powder, baking soda, salt, and flaked coconut, and nuts {if desired}. Gradually combine both mixtures while pouring in your buttermilk.
  2. Bake at 325 degrees in two large greased and floured loaf pans for 1 hour and 15 minutes {could be less or more depending on your oven, insert a tooth pick to see if done in the middle}
  3. When your bread has about 5-10 minutes until it is done, make your glaze. Boil sugar and water and butter for 5 minutes. Remove from heat and add extract. When the bread is done, poke holes in it and pour sauce on top. Cool, and enjoy!
