Recipe #19: Best salad dressing you will ever have. Ever.

note – I halved the recipe to make this amount (12 oz)

I realize that this says it’s recipe 19, and I haven’t done a 16 or 17 or 18, but I really have. I just wanted to get this one out before Valentines day because it would be perfect if you are trying to do a redish/pinkish themed dinner. Plus it’s amazing.

My husband’s family has a tradition. On your birthday, you get to pick whatever you want for dinner (I think most families have this tradition). This is what I pick. A salad. Because I want an excuse to eat the dressing. It’s that good.

So, here is the recipe:

2/3 cup cider vinegar
1/2 medium red onion (remove only the outer layer) 
1 1/2 scant cups sugar
1 tbsp dry mustard 
(I’ve used regular mustard before and it works too)
2 tsp salt
2 cups canola oil
1 tbsp poppy seed
Blend all the ingredients, except the poppy seed. Add the poppy seed and blend slightly. 
The darker the onion is, the prettier it will be. 
This dressing is especially good with a salad that has strawberries and glazed walnuts.. I’m currently learning how to glaze the walnuts and I’ll post that recipe once I get it all figured out. Enjoy!
