Not only is this one of my favorite recipes, but it is also a perfect recipe for fall time. Imagine pumpkin pie only in cake form. Delicious!
What does this have to do with making your family closer? Um… it’s food. Enough said, right? Nothing like gathering around the table after dinner for a little bedtime snack, right? Plus this cake has pumpkin in it… that means it’s good for you, right?
Alright, enough talk. Here is the recipe:
- 1 yellow cake mix
- 1 egg
- 1 stick melted butter
- 20 ounces pumpkin
- 2/3 cup brown sugar
- 1 tablespoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 2 eggs
- 2/3 cup milk
- Turn on oven to 350
- Set aside 1 cup cake mix
- mix remaining cake mix, 1 egg, and stick of butter together.
- Press into the bottom of a greased 13 X 9 inch pan
- Mix the rest of the ingredients together and pour over crust.
- Sprinkle with reserved cake mix (just until covered)
- Bake for 45-50 minutes
