I don’t know why I call these Christmas Caramels. For some reason I associate home made caramels with Christmas. Maybe it’s because they make an AWESOME gift to give to neighbors during the holidays. Maybe it’s just because they are as amazing as Christmas. I don’t know. Whatever the reason, these things are seriously THE BOMB. I ate like six this morning. For breakfast. (don’t judge.)
So my friend, Sarah, who owns The Vinyl Company, an awesome etsy shop with super cute vinyl products, makes these every year along with a bunch of other delicious goodies. When I was trying to remind my husband that she made them every year, I remembered that each time she gives them to us, I sort of hide all the caramels and let my husband have the other goodies… He never even knew that the plate had caramels on it to begin with. Seriously, if you can’t tell, I love these things.
So I got the recipe from Sarah and changed it just a little bit to make it my own. It’s an easy recipe, but it does take some undivided time (about 20ish minutes). It needs to be stirred CONSTANTLY so it doesn’t burn. But, other than that, it’s easy enough.
The first thing you need to do is butter a 7 x 11 inch pan. Don’t skimp on the butter. Anywhere you miss, the caramel will stick. Then, all you do is mix all the ingredients together, bring to a boil over medium heat (DON’T cheat with high heat!) stirring constantly the whole time. Once it boils, keep stirring and keep it on medium heat. Stir it for about 15 minutes, then pour it into the prepared pan. Let it cool, then cut it into small pieces and wrap with wax paper. One batch makes about 75 ish candies.
- 1 cup butter
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup light corn syrup
- 14 oz sweetened condensed milk
- 2 teaspoon vanilla
- Butter a 7 x 11 inch pan
- In a medium sauce pan, add all ingredients.
- Over medium heat, bring the mixture to a boil. Stir with a wooden spoon constantly.
- Once it starts to boil, allow it to boil for 15 minutes, stirring constantly.
- Pour into prepared pan
- Allow caramel to cool
- Cut and wrap in wax paper
