Cowboy Caviar

This recipe is actually from my sister, and I have to say, I am a salsa lover. I think part of that is the fact that some of my best memories growing up involved a bowl of salsa and a handful of chips. My sister and I used to have movie nights with chips and dip and homemade salsa, and whenever I visit my sister, she makes me homemade Salsa. I have two older sisters and it’s just what we eat when we get together! I also remember a time getting some SUPER HOT {Like, they made it it Mexico and know what they are doing hot} salsa up my nose from laughing so hard {painful, yes} But a wonderful memory! So this recipe is another salsa recipe for you, but it actually doesn’t have ANY tomatoes. It’s a great pregnancy craving buster because it’s kind of tangy like you get from a pickle, but so much better! The ingredients sound kind of crazy, but just trust me k? This recipe ROCKS, and it’s just PRETTY. The red and the green veggies make me happy. I love to pair this with grilled sandwiches or really anything you need a side for {almost} 🙂 Or just for a snack! {Notice in my picture, my bowl is almost gone, because well, I had been so excited about eating it, I forgot to take a picture!!}

And! I have to note, this recipe is the BEST when you let it chill and set overnight. Basically like most salsas, you need to give it some time to combine all the amazing flavors! {OH, and this recipe makes 2 Cups, so if you are planning on serving this to a group of people, I would double it, or if you’re super hungry… 🙂
