Recipe #21: Potato and Leek Soup



I know what you’re thinking… Leeks??? What??? I had heard of these before but if the wasn’t enough to turn me off of them, the way they looked were. I mean.. I know I’m not supposed to judge a book by its color… or a veggie by it’s appearance, but these are some weird looking things. I can honestly say that I wouldn’t have ever bought them. I participate in a co-op here called Bountiful Baskets. It’s an organization that is made up by volunteers. The way it works is at the first of the week, you buy your basket, which consists of a bunch of fruits and veggies (5 different kinds of each). The basket is $15. Then, on Saturday, you go and pick it up. The idea is that at least once a month, you will go an hour early and help distribute the fruits and veggies.  Anyway, this week, when I picked up my basket, there were these long leafy things with tentacles on the end. My husband thought they looked like what he imagined a leek would look like, and after a quick Google search, we realized he was right. So, I looked up what I was supposed to do with them. It turns out that they are a mild onion type veggie. They need to be cooked before eaten. They can be put into salads, or in a few other dishes, but the most popular use is in Potato and Leek Soup.

 So, I looked up a few recipes and found one that looked promising. It was one posted on the Food Network here. I did a few other things, so I’ll walk you through it.

For this recipe, you need: 
1 pound of leeks (I used 5)
3 tablespoons of butter
a pinch of salt
4 cups broth (I used chicken broth) 
8 small golden potatoes 
1 cup heavy cream
1 cup buttermilk 
Pepper to taste
ham
 (I had some leftover so I added it to the soup, it’s not essential though)

To prepare the leeks, I first cut off all of the dark green leaves. I also cut off the tentacle looking things that most people call roots. Then, I sliced what was left in half. I washed each layer as best as I could. Then, I cut them into pretty small pieces.

In my 6 quart dutch oven, I melted 3 tablespoons of butter. I had the heat on medium-highish. Then, I put the leeks in the pot with a large pinch of salt and covered it for 5 minutes. By the way, I used about 5 leeks. After the first 5 minutes, I turned the heat down and let the leeks cook for another 25 minutes. I stirred them every so often.

While that was happening, I peeled and cut 8 small golden potatoes. And, I didn’t have any vegetable broth, so I made some chicken broth from bullion cubes. After the leeks were good and cooked, I added the broth and potatoes and let them cook for 45 minutes. Don’t forget to stir occasionally. During this time I also made buttermilk since I didn’t have any on hand. Don’t worry, it’s super easy. Just put a tablespoon of vinegar into a 1 cup measuring cup and then fill it the rest of the way with milk. Don’t stir it, and let it sit for at least 5 minutes.

I don’t have an immersion blender, so I put the cooked soup into a blender and mixed it all up. That worked really well. Pour it back into the pan and add the cup of heavy cream and the cup of buttermilk. I didn’t have any white pepper, so I just used regular pepper. And, I didn’t have chives so… I didn’t use them :)

At the end, as an afterthought, I decided to add some ham chunks to the soup. I just cut up some leftover ham I had in the fridge and added it to the soup. We are a HUGE meat family so it made my husband like it a little more.

That’s it. I was pleasantly surprised about how much I liked it. I guess with a whole cup of heavy cream it’s hard to not be good, right?

Recipe #20: Famous Fuller French Toast

My grandma loves to write. I am pretty sure I inherited my love of writing from her. She has books and books full of things she has written. I have always admired her and her dedication to her passions. She is a mother of 7 and a grandmother of who knows how many. She always has a smile on her face, and food in the oven :) One of my favorite memories of her is a time when I was at her house and she gave me breakfast in the morning. It was a bowl of cereal topped with a scoop of ice cream. Best breakfast ever. Why not have dessert first thing in the morning, right?

Anyway, when she found out I was doing these recipes, she gave me a few. This one is one she calls Famous Fuller French Toast. It is delicious. Think scone, only without having to make the batter.

For this recipe, you need:

2 cups flour
2 tsp baking powder
1 tsp salt
4 tbsp sugar
1 3/4 cup milk
2 eggs
bread
canola oil 
Alright so first, make the batter. Mix all the ingredients together except the bread and oil. Then, in a electric fry pan or a skillet (I used my Lodge Color Skillet), heat up enough oil to be able to submerge at least half of the bread (about 1/2 inch). Yes, it’s a lot of oil… but who said this would be healthy?
Dip a piece of bread in the batter. Wait a few seconds and turn it over. Coat it as good as you can with the batter. Then, put it in the hot oil. BE CAREFUL! The oil is HOT and it will splatter. Wear shoes (trust me). After a little while, flip the bread. I flipped each piece multiple times so it didn’t burn. You want to cook it until its gold brown on each side.
That’s it. This recipe can do about 6-8 piece of bread. You can eat them plan or with butter/syrup/powdered sugar. They are super yummy! Enjoy!

Recipe #18 Strawberry Fudge

If you’re looking for an awesome Valentine’s Day dessert, look no further than this delicious strawberry fudge recipe. This weekend, I am making a dessert for a church party. Since it’s a Valentine’s dinner, I wanted to make a Valentine’s Dessert! I found this one at www.insidebrucrewlife.com. It’s a super neat blog with lots of good food! You can get the recipe here. The original recipe has a shortbread crust, but I made it without. I was amazed at how easy it was to make. It seriously took like 5 minutes. And they look pretty. All you do is melt white chocolate chips, butter, salt, sweetened condensed milk, some dunken hines frosting creations, and  marshmallow cream. Make sure you don’t cook it too hot because it will burn. Then you put it in a dish (I greased it first, but I don’t know if that was necessary)  and let it set up in the fridge. Then, decorate! Easy enough right? I halved the recipe so I could try it and make sure it was going to work out. It worked pretty good, but I put too much marshmallow cream and they are pretty rich… but still good!

So, here’s the recipe:
3 1/4 cups white chocolate chips
2 Tablespoons butter
1/8 teaspoon salt
1 can sweetened condensed milk (14 oz)
1 jar marshmallow cream (7 oz)
2 packets Duncan Hines Strawberry Shortcake Frosting Creations
1/2 teaspoon shortening

Melt the butter and 3 cups of the white chocolate chips. Add the salt, sweetened condensed milk and marshmallow cream. Stir in the frosting creations. Pour into a greased 8X8 pan.

Put the pan in the fridge and let it sit at least a few hours (I did it over night)

When you’re ready to decorate, cut the fudge out of the pan and place it on your serving dish (or decorate in the pan). Melt 1/4 cup of white chocolate chips and shortening in the microwave. Place in a microwave safe bowl and cook in the microwave for 30 seconds. Stir and put it back in for another 30 seconds. Repeat until the chocolate is smooth. Spoon into a ziploc bag and cut a hole in it and drizzle over the fudge.

Recipe #17: Easy Pulled Pork (or beef)

This recipe is my husband’s baby. He is always the one who makes this. Every time we get a big group together, this is the recipe that we use. It’s super easy to feed TONS of people with it, and everyone loves it. Plus, there is hardly any work that needs to be done.

For this recipe, you need a pork shoulder roast (or beef), a crock pot, bbq sauce, a rootbeer (Andre will only use Henry’s) and garlic salt.

Rub the garlic salt over your pork. Place it in the crock pot and pour in some rootbeer. Andre usually takes a little drink off the top and pours in the rest of the bottle.

Let the pork cook on high for 6 hours or so. Check it every once in awhile and break it up when you can. About an hour before you want to serve it, drain out the root beer. Pour in BBQ sauce. Make sure you saturate all the meat with the sauce. It’ll take two or three bottles usually.

That’s it! Serve with hamburger buns and cheddar cheese. Enjoy!

Recipe #19: Best salad dressing you will ever have. Ever.

note – I halved the recipe to make this amount (12 oz)

I realize that this says it’s recipe 19, and I haven’t done a 16 or 17 or 18, but I really have. I just wanted to get this one out before Valentines day because it would be perfect if you are trying to do a redish/pinkish themed dinner. Plus it’s amazing.

My husband’s family has a tradition. On your birthday, you get to pick whatever you want for dinner (I think most families have this tradition). This is what I pick. A salad. Because I want an excuse to eat the dressing. It’s that good.

So, here is the recipe:

2/3 cup cider vinegar
1/2 medium red onion (remove only the outer layer) 
1 1/2 scant cups sugar
1 tbsp dry mustard 
(I’ve used regular mustard before and it works too)
2 tsp salt
2 cups canola oil
1 tbsp poppy seed
Blend all the ingredients, except the poppy seed. Add the poppy seed and blend slightly. 
The darker the onion is, the prettier it will be. 
This dressing is especially good with a salad that has strawberries and glazed walnuts.. I’m currently learning how to glaze the walnuts and I’ll post that recipe once I get it all figured out. Enjoy!
