I made Spinach Manicotti today. I really liked it. However, my husband was not a fan. But, he is pretty picky, especially when it comes to veggies. I had never used manicotti noodles and I have to say, I failed. Almost every noodle was broken by the time it got done getting stuffed.                                        Quinoa and Veggies
So a little while ago, I discovered Quinoa. I may be one of the last people to discover this gem, but it has changed my life. Okay, maybe that's a little dramatic, but it is really good. I'm not exactly sure what it is... I believe it is some sort of a grain? I guess I could do a little research but that takes time. All I know is that it is good for you and really easy and yummy. So I got the idea for this recipe from Our Best Bites. I really love their cook book. A lot of the recipes seem like they are going to be hard, but end up being super easy. Anyway, in their cookbook, there is a recipe called Coconut Chicken Fingers. I modified that a little to make these. These were easy and quick and they taste awesome. They took less than 30 minutes to make and then they cooked for 20. See more...




This recipe is kind of my own invention. It started out as one thing and ended up as something completely different. I love it because it a whole meal in one dish (thus the word casserole, right?) I also really like that I can do most of the prep before dinner time (nap time cooking anyone?) and just stick it in the oven 30 minutes before we want to eat. See more...
This is one of the first recipes that I figured out on my own without following a recipe. Andre asked me one time to make potato soup, so I cut up some potatoes, put them in water and chicken broth, and added some spices. It was delicious. And at the time, we didn't have much money, so it became one of my go-to meals at the end of the month. It can be dressed up quite a bit, as the recipe I am going to share with you is. See more...


My husband's grandma is a wonderful cook. She loves to cook for people, and she is pretty darn good at it. She is always coming up with some kind of fabulous food. I have learned a lot from watching her at work. This is one of my favorite recipes of hers. It is easy and delicious and can be made with as little as three ingredients.
