Seriously. There is pumpkin EVERYWHERE. And it’s so delicious. BUT you are on a diet. You can’t possible eat any of that pumpkin stuff because it tastes SO good that it must be bad for you… right???
Pumpkin is GOOD for you! On the 21 Day Fix, it satisfies one of those dreaded green containers. It’s true! You CAN have pumpkin pie this holiday season and NOT go off of your meal plan.
The best part about this recipe is that it’s literally takes about 3o seconds of prep and 5 minutes of cooking (in the microwave no less), so you can make this up after Thanksgiving dinner is over and eat it while everyone else is enjoying their desserts that are going to stick straight to their booties. And it will be THAT much sweeter 🙂
What’s your favorite healthy pumpkin recipe??
- 1 cup pumpkin
- 1 egg
- 1 tablespoon maple syrup or honey
- 2 tsp pumpkin pie spice
- Walnuts - optional
- Spray a ramekin with cooking spray
- Mix all ingredients together and place in ramekin.
- Cook for five minutes in the microwave
- Top with walnuts if desired.
