I got this recipe for blueberry muffins from a Relief Society newsletter that was handed out at my church. I made a few changes though because I was half way done making the muffins when I realized that I had no eggs. Luckily, I found this website that told me that I could substitute 1/4 cup of applesauce and 1 tsp baking powder for that one egg. This resulted in deliciously moist muffins that were divine. I think if I were to make these muffins again (and I probably will) I would put in a little less oil or a little less applesauce because a few of them were a little too moist. But, they were still very delicious.

Crumb topping. I stirred it a little bit more before I actually used it.
Right before it went into the oven
- 1 1/2 cup flour
- 3/4 cup white sugar
- 1/2 teaspoon salt
- 3 teaspoons baking powder
- 1/3 cup vegetable oil
- 1/3 cup apple sauce
- 1/2 cup milk
- 1 cup fresh blueberries
- 1/2 cup white sugar
- 1/3 cup all-purpose flour
- 1/4 cup butter, cubed
- 1 1/2 teaspoon ground cinnamon
- Preheat oven to 400 degrees F.
- Prepare a muffin pan by placing paper muffin cups in the pan.
- Combine 1 1/2 cup flour, 3/4 cup sugar, salt and baking powder.
- Mix well.
- Add vegetable oil and applesauce.
- Mix well.
- Carefully fold in blueberries.
- Fill muffin cups to the top.
- Mix 1/2 cup white sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoon ground cinnamon.
- Sprinkle topping mix over each muffin cup.
- Bake for 25 minutes or until a toothpick inserted into the center of a muffin comes out clean
