So I was going to post up another recipe tonight (Enchilada Casserole), but I think I’m going to wait for Monday to post that one. While I was cooking it, I got to thinking. How am I supposed to know what spices go good with what meats? My mother did teach me some cooking basics, but she isn’t a big spice user, and my husband cannot live without tons of spices. My grandmother-in-law told me that the spice bottles used to say on them what they are good with, but they don’t anymore, at least mine don’t. I really don’t have any idea what I’m doing when it comes to spices. I pretty much just follow whatever the recipe tells me to. If I am not following a recipe, I get in spice ruts where I use one spice on EVERYTHING (Garlic Salt anyone?) I want to be able to create some original meals, so I figured I needed to know what spices might work well with whatever meat I am cooking. I decided to make this paper for myself to use as a little cheat sheet, and I thought some other people might appreciate it as well so, here it is!
